Why drink this glowing green smoothie?
There’s a part of us as humans that believes that there’s a magic “answer” to solve all the difficulties to self-care and eating well. If I could just make myself {insert healthy practice}, I’d be skinnier, healthier, and happier. Unfortunately, there is no magic green health tonic that will make healthy living easy. But there are things you can do to make eating nutrient-filled, immunity boosting foods easier and more delicious.
Enter: the Glowing Green Smoothie. Alex and I created this to be a smoothie we’d want to drink again and again to get lots of nutrients while satisfying a sweet craving. What’s so great about this green smoothie?
- It has the perfect sweet tart flavor. So many green smoothies can be so loaded with greens that they taste bitter. This one is perfectly sweet art.
- It stars healthy leafy greens and apples. Trying to eat more leafy greens? Spinach leaves make the vibrant green color here, and green apple brings big flavor and lots of vitamins.
- It’s got nuts for protein and to keep things filling. Blending cashews into this smoothie loads it with plant-based protein and helps to keep you full.
- It’s plant-based. There’s no dairy in this smoothie, making it 100% whole food plant based (WFPB) and vegan: perfect for plant-based breakfasts and snacks!
How to make a glowing green smoothie + storage tips
This glowing green smoothie turns out tangy and tart, just sweet enough, starring green apples and spinach. It’s truly our new favorite green smoothie! The tangy is balanced with sweet, and it has a loose but creamy texture that’s easily drinkable and a vivid, glowing green color. There’s not much to making this smoothie, but here are a few pointers:
- Simply blend all ingredients together! This works in a standard or large Vitamix style blender. Or, you can do a half recipe in an immersion or small blender for 1 serving.
- Can you make a green smoothie ahead? Yes. You can make ahead and refrigerate until serving. You’ll just need to stir it before eating. This is helpful for busy mornings if you want to mix it up the night before.
- Use any type of mild leafy greens you like. The recipe calls for spinach, but if you have other mild flavored baby greens (even baby kale) you can use them here. Standard kale may even work, you’ll just need to balance the flavor to make sure it’s not too bitter.
We can’t promise that it will make you skinnier or healthier or immune to all disease, but it tastes incredible and it is literally packed with nutrients. Alex and I only need one smoothie recipe, and this is it. Glowing Green Smoothie on repeat. (Oh, and Larson loves it too.)

Description
This glowing green smoothie is the perfect immunity-boosting drink with a sweet tart flavor starring green apple, loads of spinach, and protein-packed nuts.
Ingredients
- 1 large green apple
- 1 tablespoon maple syrup
- ½ cup water
- ¼ cup raw cashews
- 3 cups spinach
- 10 ice cubes
- 1 tablespoon fresh squeezed lemon juice
Instructions
- Core the apple and cut it into chunks, leaving the skin on.
- Place all ingredients a blender and blend. Add the lemon juice and blend for a few seconds again. Taste, and add a touch more maple syrup and/or lemon juice as desired. Serve immediately, or refrigerate for up to 1 day.

I have a suggestion for this smoothie – you could substitute the dates/maple syrup with frozen mangoes for natural sweetness, and a really yummy smoothie. The mangoes work well with the spinach and the apple for tartness. Hope you try it out! Good luck for your book launch :)

You’re on the right recipe — this Glowing Green Smoothie recipe doesn’t have banana! You can also substitute 1 cup frozen mango or 1 cup apple for a banana. You can try about 1/2 cup oats or silken tofu as a banana substitute, but you’ll also need to add sweetener like maple syrup or honey to replace the sugar from the banana. Good luck!
