There’s not much you need besides the vegetables here! This grilled zucchini and squash is very basic, but uses just the right ingredients to get big flavor. On their own both are very bland, but amp them with these Italian seasonings and they taste incredible. Here’s what you need for grilled zucchini and squash:
- Medium-sized zucchini: You’ll want a zucchini that’s not too small or too big. Zucchini or summer squash that are too large can get stringy and seedy.
- Medium-sized summer squash: Same notes as for the zucchini!
- Dried basil and oregano: to bring in the Italian flavor
- Garlic powder and onion powder: rounds out the amazing flavors

3 ways to cut zucchini and squash for grilling
How to cut zucchini and summer squash for grilling? There are a few ways we like to do it. Here’s a little breakdown:
- Rounds. You can slice the zucchini and squash into 1/2-inch thick rounds.
- On the bias (diagonal). If you cut diagonally or “on the bias”, you get larger, most interesting shapes.
- Planks. You also can cut the vegetables width-wise into long planks: see this grilled zucchini.
How to grill zucchini and squash
Now, let’s get to the grilling! All you need to know is the grill temperature and basic timing. Once you’ve got that down, memorize this recipe and make it on repeat! Here are the basic steps (or jump to the recipe):
- Preheat a grill to medium high heat. That’s about 375 to 450 degrees.
- Cut the zucchini and summer squash into rounds or on the bias. Make the pieces about 1/2-inch thick.
- Toss with olive oil and seasonings. See the recipe below; adjust as necessary if you have more or less quantity of vegetables.
- Grill on the grates for 4 to 6 minutes. Cook until charred and tender, turning once.

Ingredients
- 2 medium yellow summer squash
- 1 medium zucchini (1 3/4 pounds total with both)
- 1 ½ tablespoons olive oil
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon kosher salt
Instructions
- Preheat a grill to medium-high heat (375 to 450 degrees Fahrenheit).
- Slice the zucchini and squash on the bias, about 1/2” thick. Place it in a bowl and mix it with the olive oil, oregano, garlic powder, onion powder, and kosher salt.
- Place the squash directly on the grill grates and grill for about 2 to 3 minutes per side (4 to 6 minutes total), until charred and tender. Taste and add a few more pinches kosher salt.
