The perfect banana bread. I love the amount of cinnamon and vanilla in this recipe. Personally, I ground the oats in the blender but mixed everything else together in my Kitchen-Aid stand mixer because I found that easier than cramming everything into the blender.

It’s delicious, moist and not too sweet. Although, I do not recommend mixing the ingredients in the blender if you don’t have a very powerful one. It was a mess for me; my blender was overheating. It couldn’t handle the thickness of the mixture even though, I combined the ingredients with a spatula before starting the blender as the recipe suggested, so I had to use my standing mixer. Also the cooking time was a lot less, my bread was done in 35 minutes and it was perfect.
