Here’s a sauce that adds a hint of gourmet to everything it touches: Truffle Aioli! This delectable dip is rich and creamy, with earthy notes from the truffle and a pop of savory garlic. It takes minutes to make and tastes great on literally everything: it’s perfect with fries, grilled fish, roasted vegetables or even on a sandwich. For two truffle lovers like us, we’re absolutely smitten.
Ingredients in truffle aioli
Aioli is a sauce that comes from the South of France and Spain. A traditional aioli is made from garlic blended in a mortar and pestle with egg yolk, lemon juice or vinegar, and olive oil. Since the 1990’s, people in the US have been calling flavored mayonnaise “aioli”. Mayo is very similar: it’s just made with canola oil and no garlic. So many flavored aiolis are made using mayonnaise.
This truffle aioli recipe uses a base of mayonnaise because it’s the quickest way to make aioli at home. Of course, you can also make this using the traditional aioli method if you’d like! Here’s what you’ll need for the base recipe:
- High quality mayonnaise: the quality really does make a difference here! We like a mid-priced mayo like Sir Kensington’s
- All natural truffle oil: the flavor key! See below
- Garlic
- Salt
Important: find natural truffle oil
Some chefs have turned up their noses at truffle oil in the past, because many brands available to consumers were synthetic. The flavor of synthetic oil mimics black truffles, but it’s extremely strong and artificial tasting. However in recent years, there are finally some great all natural truffle oils on the market.
- Natural truffle oil is made with pieces of actual truffles and is not synthetic. The flavor is much gentler and tastes “real.”
- Our favorite all natural truffle oil? TRUFF truffle oil (we’re not affiliated). It has a bold, rich essence and is the best all natural oil we’ve worked with.
- Many truffle oils in grocery stores are synthetic. Look on the back of the bottle at the ingredient list. If real black truffles are not listed, it is not natural truffle oil. What if all you can find is synthetic truffle oil? Use it but start with half the quantity, then add more to taste.
Other ways to add truffle flavor
Another way to add truffle flavor to a truffle aioli? Canned truffles and mushrooms. This Urbani canned truffles and mushrooms contains mushrooms that are flavored with real truffles. We’ve found it at our local grocery and the flavor is intense and irresistible. This would add chunks of real mushroom and truffle to your aioli: which has a different visual effect but it still delicious. Start by adding 1 teaspoon, then more to taste.

Really, what can’t you do with truffle aioli? It adds sophisticated, gourmet flavor to anything it touches. Here are a few ways to use it:

Ingredients
- ½ cup high quality mayonnaise (or vegan mayo for vegan)
- 1 garlic clove, grated
- 1 teaspoon all-natural truffle oil or to taste with a synthetic truffle oil (Important! See Note)*
- Fresh ground black pepper, optional (to taste)
Instructions
- In a medium bowl, stir together all ingredients. Taste and if desired, you can add a hint more truffle oil. Stores up to 2 weeks refrigerated.
Notes
*All natural truffle oils like TRUFF have the best flavor. Synthetic truffle oils taste artificial and very strong. If you buy a truffle oil that is not marked with “natural flavor” anywhere on the package, it will be stronger. Use half the amount listed, then more to taste.
