First of all, this creamy vegan tomato soup recipe is made silky smooth by blending in cashews instead of the typical cream. And though it’s simple to put together, it’s got a robust, bright flavor.

The main secret (besides cashews) is using fire-roasted tomatoes. Why? Fire roasted tomatoes have a sweeter, more developed flavor than other canned tomatoes, making them perfect for using in a quick vegan tomato soup recipe. We use Muir Glen’s fire-roasted brand and love the way they allow for a robust taste without simmering for hours. Description

  1. Chop 1 onion. Mince 4 cloves garlic. Chop ½ cup basil leaves.
  2. In a medium pot, heat 2 tablespoons olive oil over medium heat. Add onion and sauté for 5 minutes, until translucent. Add garlic and red pepper flakes; sauté 1 minute until fragrant. Add white wine vinegar and cook until evaporated.
  3. Add basil, cashews, canned tomatoes and their liquid, broth, kosher salt, and black pepper. Bring to a boil, then reduce heat and simmer 20 minutes. When done, use an immersion blender to puree the soup for several minutes until creamy and the cashews have fully incorporated (alternatively, puree in a blender).
  4. Meanwhile, toast the bread slices and use small, star-shaped cutters to cut out star shapes. Chop the chives.
  5. Serve soup warm with star toasts and chopped chives.

  1. Any time they can eat with a toothpick, it’s a hit! All the fruit, all the veggies chopped up and served on a flat plate with toothpicks. Especially with a little cinnamon on the fruit! Makes healthy eating a fun treat at snack time.

  2. Now that I have a wee one (and I refuse to cook 2 dinners), I’m always on the lookout for “toddler friendly” meals—and star toasts—amazing! Plus, this recipe is great because the cashews add protein and more importantly, everything is in my pantry!!! As for keeping life interesting, we do it with spices, of course… Tomato soup, my go to is curry if I want it a bit more exotic (Thai curry blend works well) or an herb/italian blend if I’m eating it with grilled cheese. Oh, and grilled cheese stars would be fun, too! (Kids love dipping anything and everything).

  3. I live in a place where I can do most of my errands on foot. I try to vary the route I take to go to the bank, the grocery store, the library, etc. It’s so soothing to walk around an area of the city that I should know, but haven’t explored that particular pocket. I love it.

    I have no advice for children, but I bet they’d love these star toasts. And this soup, for that matter. It sounds delicious.

  4. I live in England and it is impossible to get fire roasted tomatoes here. Have you any suggestions about what to add for a similar flavour please? When my boys were young, the eldest really didn’t like sandwiches so I used to cut them out using biscuit cutters like tractors and ducks. Did the trick!

    1. Hi Sukey! So sorry for the delay in response! We had another question on this as well from a reader in the UK. I would say just try to find the highest quality tinned tomatoes that you can – you also may find you’ll have to cook the soup a bit longer to develop the flavor. Let me know if you try it out! And, I LOVE the idea of tractors and ducks, so cute! I will have to use that in the future :)

  6. This is crazy good!!! I only had regular tomatoes so I added in a little smoked paprika instead to give it the fire-flavor. Delicious.
