This pita pizza recipe makes a fast and easy meal! Pita bread stands in as the crust of these personal pizzas.

Pita Pizza

There’s nothing we love more than a great artisan pizza, with the perfect supple charred crust and gooey toppings. But of course, there’s not time for that every day. Here’s a great shortcut to pizza night: Pita Pizzas! This recipe uses pita bread to stand in as the crust of a personal pizza. It’s the trick to a quick and easy meal, and it’s especially a hit with kids. Not sure what’s for dinner? Try this recipe: it’s faster than delivery pizza!

Methods for pita pizza

The trick to pita pizza? You’ll want to get your pita as crispy as possible during the bake time. So, don’t place them on a baking sheet! There are two methods that make a great crispy pita bread pizza:

  • Pizza stone (best method): The best method for is a pizza stone! While it’s special equipment, the pizza comes out the crispiest. (Here’s the pizza stone we have). Depending on the size of the stone and your bread, you may be able to fit up to 4 pizzas at once.
  • Oven grates (next best): Pita pizza also works baked directly on the oven racks. It doesn’t come out quite as crispy, but it still tastes great! Make sure to place a baking sheet in the oven to catch drips with this method.

Try homemade pizza sauce

Another key to great pita pizza, in our opinion? A great homemade pizza sauce! Our easy Pizza Sauce recipe can revolutionize your pizza game: it’s great on anything from homemade artisan pizza to pan pizza to pita pizza. Here’s what makes it great:

  • It takes 5 minutes in a blenderAll you need are canned tomatoes, garlic, oregano, salt and olive oil. Whiz it up and taste one spoonful from the blender. It’s life changing!
  • The flavor goes big with fire roasted tomatoes. Fire roasted tomatoes are key for the flavor here! They’re tomatoes that have been roasted on an open flame, making them taste sweet right out of the can. Can’t find them? Use the best quality canned tomatoes you can find.

Alternative: roasted red pepper sauce

An alternative pita pizza sauce is a roasted red pepper sauce! We’ve made this sauce for years and it was one of our initial recipes on this website. Here’s how to make this red pepper sauce:

  • In a food processor or blender, place 6 ounces roasted red peppers: half a 12-ounce jar. (Save the remaining peppers for a topping).
  • Add 10 sundried tomatoes and 1 tablespoon of the oil from the sun-dried tomato jar. Purée until smooth. Taste and add salt as desired.
  • Slice the remaining peppers into thin strips and use them to top the pizza.

Description

This pita pizza recipe makes a fast and easy meal! Pita bread stands in as the crust of these personal pizzas.

Ingredients

Scale
  • ¾ cup Homemade Pizza Sauce (or Roasted Red Pepper Sauce*)
  • 1 cup shredded mozzarella cheese
  • Grated or shredded Parmesan cheese, for sprinkling
  • Fresh basil, for garnish (optional)
  • Other toppings: chopped artichoke hearts, red onion, sliced cherry tomatoes, jarred roasted red peppers*, sauteed mushrooms, prosciutto, mini pepperoni, chopped bell peppers, pesto, feta, goat cheese, smoked mozzarella or gouda, etc.

Instructions

  1. Preheat the oven to 450 degrees Fahrenheit with a pizza stone if you have one.
  2. Make the Homemade Pizza Sauce.
  3. Brush both sides of each pita lightly with olive oil. Top each pita with 3 tablespoons pizza sauce and ¼ cup shredded mozzarella. Add a sprinkle of grated Parmesan and a small pinch of salt. Add additional bite-size chopped toppings if desired (but not the basil).
  4. Cook using one of the following methods:
    1. Pizza stone (crispiest): Place as many pizzas as fit directly onto the preheated pizza stone (our large stone fits four). Bake 5 minutes until crispy and the cheese is melted.
    2. Oven rack: Place the pizzas directly onto the oven racks, placing a baking sheet underneath to catch any drips. Bake 5 minutes until crispy and the cheese is melted.
  5. Top with fresh basil, if using. Slice into pieces and serve.

Notes

*For the Roasted Red Pepper Sauce, in a food processor or blender, place 6 ounces roasted red peppers (half a 12-ounce jar), 10 sundried tomatoes, and 1 tablespoon of the oil from the sun-dried tomato jar. Purée until smooth. Taste and add salt as desired. Use the remaining roasted red peppers to top the pizzas, sliced into thin strips.

  1. This is a nice, quick and easy recipe!
I used a garlic and oregano pita bread (package of 6 I found in markdown for only $1), which was a perfect flavor for the crust.

Also used fontina cheese, which we love for our pizza.

I love my other dough recipes, but it is great to have a quick recipe.
